Very Cute Craft For A Boy

As the end of summer is approaching, we seem to be having more and more kids over to play. I always try to have a craft for the kids to do, but it is really hard to find something for boys. Today, to help put us in the back to school mode, we made pencil boxes. This was very easy and very inexpensive. I just bought round wooden circles, scrapbook paper, a plain white pencil box, small wooden bats, and some letter stickers.

First the boys painted the circles to look like baseballs, then cut the scrapbook paper to fit on the top of the pencil box, glued it on, then added their names with the stickers, once the baseballs were dry I helped them hot glue the baseballs, and the bats. Very easy and very cute! Oh and course they had to add their jersey number on the ball!

Best Summertime Cake

Ok this cake is a little work, but so worth it! Not only does it taste fabulous, but it also looks pretty. Just add a little fresh fruit, and it is completely decorated.

1 1/2 cups butter
3 cups white sugar
6 eggs
3 cups all-purpose flour
1 teaspoon vanilla extract

In a large bowl, cream butter and cream cheese until smooth. Add sugar gradually and beat until fluffy.
Add eggs two at a time, beating well with each addition. Add the flour all at once and mix in. Add vanilla.
Pour into a 10 inch tube pan. Bake at 325 degrees F (160 degrees C) for 1 hour and 20 minutes. Check for doneness at 1 hour. A toothpick inserted into center of cake will come out clean.

Great Green Beans!

I didn't take a picture of these yummy green beans last night when I made them, because my camera is having a few issues. I am still posting the recipe because you are going to love these healthy green beans so much......

1 bunch thin green beans
Extra-virgin olive oil
Kosher salt and freshly ground black pepper and garlic powder
1 cup grated Parmesan cheese (shredded in the bag)

Directions
Preheat the oven to 400

Trim off the tough end of the beans and arrange the beans on a nonstick cookie sheet. Drizzle with olive oil season with salt pepper, and a generous amount of garlic powder, to taste. Sprinkle the cheese evenly over the top and bake until the cheese melts and forms a crisp shell over the beans, about 10 minutes. Let the beans sit a few minutes for the cheese to cool slightly. Lift the beans out onto a platter and serve

Unfried Fried Ice Cream

Unfried Fried Ice Cream
Container Vanilla Ice cream (I am using 48 oz size)
3 Cups Honey and Oats Cereal*
3 Tablespoons butter
3 Tablespoons sugar
1 Tablespoons cinnamon
Scoop frozen ice cream out onto waxed paper lined baking sheets and place in freezer for at least an hour, or until hardened.

During that time, place cereal in gallon zipper bag and crush. Melt butter in microwave and stir in sugar and cinnamon, pour into bag with cereal and seal. Knead with hands until well mixed. Pour out onto lined baking sheet and place in oven at 350 just until toasted, about five minutes. Keep close watch as cereal will burn easily.

Remove from oven and allow to cool. Roll hardened ice cream balls in mixture, pressing lightly as you do so. Place coated ice cream in 9×13 dish and return to freezer or serve immediately.

For serving, drizzle with honey and top with whipped cream and a cherry

Warning: This is not a healthy meal, but it is so GOOD!

This is my favorite comfort food, and is a great meal to take to someone who has been sick, had a baby , etc....

Fried Cabbage

Ok I know this isn't the healthiest side dish, but I promise it is sooo good. I really had to make myself quit eating, so that I could save some for my family!
Fried Cabbage
5-6 strips of bacon (more or less if you like)
1 head cabbage, chopped
salt and pepper to taste
In large skillet, fry bacon until crisp. Place bacon on paper towel lined plate and remove all of the bacon grease from the pan except for about two tablespoons. Place chopped cabbage in skillet and crumple cooked bacon on top of it. Cook over medium high heat, stirring constantly, for about five minutes. Reduce heat to low and cover. Continue cooking until cabbage is done to your desired tenderness, five to ten minutes more. Salt and pepper to taste
