Green Smoothie


5 medium Strawberries

1 medium banana

1 medium kiwi with ends cut off (I didn’t peel mine)

One heaping handful of chopped spinach

Two tbl sp peanut butter

Half cup of milk

Scoop of your favorite flavorless protein (optional)

Ice

You will be surprised how sweet and good this smoothie is! My kids love it, and it's a great way to get a little extra veggies in their diet....they can't even taste them!

Directions:

Place all above in something blender like and pulverize. It’s a great energy smoothie pre or post workout and it’s very green which just makes you feel even healthier. It's also great for the immune system.

Swedish Meatballs Over Rice


  • 4 slices white bread, finely chopped
  • 1/2 teaspoon ground black pepper
  • 1 (10 1/2 ounce) can condensed French onion soup
  • 1/4 cup all-purpose flour
  • 1/4 cup sour cream
  • 1 teaspoon salt
  • 1 teaspoon ground ginger
  • 1 tablespoon Worcestershire sauce
  • 2 lbs lean ground beef
  • 4 eggs
  • 4 tablespoons chopped fresh parsley
  • 2 tablespoons dried onion flakes
  • 1/2 teaspoon garlic powder

Directions:

  • In bowl, combine bread with 1/2 cup water
  • Let stand until absorbed (about 2 minutes)
  • Stir in beef, yolks, 2 tablespoons parsley, onion, salt, ginger, garlic, and pepper
  • With wet hands roll heaping tablespoonfuls of meat mixture into balls, about 60
  • Place in crock pot
  • In bowl, mix together soup and flour; pour over meatballs
  • Cook on high until cooked through (about 4 hours)
  • Stir in sour cream and Worcestershire sauce
  • Serve sprinkled with remaining parsley.
This is so good, and although it seems a little time consuming to make all the meatballs, it is worth it!

Chocolate Chip Cookie Dough Balls


Ingredients

1/2 cup butter, softened

3/4 cup packed brown sugar

1 teaspoon vanilla extract

2 1/4 cups all purpose flour

1 (14 ounce) can fat-free sweetened condensed milk

3/4 to 1 cup mini semi-sweet chocolate chips

1 (14 ounce) package dark candy coating

Preparation

  1. Beat the butter and sugar in an electric mixer until fluffy. Add in the vanilla, mixing well.
  2. Alternating, add the flour mixture followed by the condensed milk, beating well in between each addition. Stir in chocolate chips. Scoop 1 tablespoon balls and place on wax paper-lined baking sheets. Refrigerate for at least 2 hours or until they are firm.
  3. In the palms of your hands, roll them into balls. Place back in refrigerator or freezer for at least 30 minutes.
  4. Melt chocolate according to package directions. Let cool. Use forks or a dipping tool, dip cookie balls in candy coating to cover. Place on a wax paper-lined baking sheet and chill until set. Store in an airtight container in the refrigerator for up to one week.

Chicken With Cream Cheese Sauce


- 3 Boneless Skinless Chicken Breast
- Italian Seasoning
- 2 Cup Chicken Broth
- 1 TBS Butter
- 1 Medium Onion
- 1 Package Cream Cheese
- 2 Cloves of Garlic
- 1 Can Cream of Chicken Soup

Place Chicken in Slow Cooker. Sprinkle both sides generously with Italian Seasoning & add 1/2 cup Chicken Broth. Place lid on and cook on low for 6-7 Hours..

About 30 Minutes before your ready to eat, in a pot add Butter & Onion and cook until they start to caramelize. Add in garlic and cook for additional minute. Add in rest of Broth, Cream of Chicken Soup, Cream Cheese and stir. Once everything is melted together pour over Chicken Breast and mix together. Chicken will be so tender as you stir it will break it up! Cook on High for 30 minutes.

I like to serve mine over egg noodles, but you could easily serve it over rice~

Chicken Penne Pasta


Easy Easy Dinner!


6 boneless, skinless chicken breasts
2 cans cream of chicken soup
1 cup Parmesan cheese
1 1/2 cups sour cream (I use light sour cream, do not use fat free sour cream with added sugar)
1 tsp. onion powder
3 tsp. garlic powder
1/2 tsp. thyme
1 package (16 oz.) penne
about 3 cups grated m
ozarella or cheddar/jack cheese

Preheat oven to 350 F. Spray large rectangular casserole dish with nonstick spray.

Cook chicken breasts in water . Let cool and cut into small pieces.

While chicken cooks, cook penne in large pot of boiling salted water 8-9 minutes, or until done e. Drain well. (The noodles will cook more in the oven, so don't overcook.)


In large bowl, combine soup, parmesan, sour cream, garlic powder, onion powder, and thyme. In casserole dish, layer half of penne, half of chicken, half of sauce and half of cheese. Sauce mixture will be stiff, use rubber scraper to spread evenly. Repeat layers.

Bake covered with foil for
25 minutes, then uncover and bake until bubbly. Let stand 10 minutes before serving. This freezes very well.

Fruit For Dessert!

This is so good it really does seem like you are eating dessert! I love to make it in individual cups and keep it in the fridge, so that it easily accessible for the kids to just grab for a snack.

6 oz. raspberries
2 kiwi, peeled and cut in 1/2 inch pieces

1 cup green grapes, cut in half lengthwise
6 oz vanilla yogurt

Combine ingredients, being careful not to over mix, although some breaking apart of the raspberries will improve the flavor. Chill if desired. This will keep in the refrigerator for a day or two.

Oreo Balls


They will be so happy when they wake up and see what I made them.....


  • 1 (16 ounce) package OREO Chocolate Sandwich Cookies, divided
  • 1 (8 ounce) package PHILADELPHIA Cream Cheese, softened
  • 2 (8 ounce) packages BAKER'S Semi-Sweet Baking Chocolate, melted

Directions

  1. Crush 9 of the cookies to fine crumbs in food processor; reserve for later use. (Cookies can also be finely crushed in a resealable plastic bag using a rolling pin.) Crush remaining 36 cookies to fine crumbs; place in medium bowl. Add cream cheese; mix until well blended. Roll cookie mixture into 42 balls, about 1-inch in diameter.
  2. Dip balls in chocolate; place on wax paper-covered baking sheet. (Any leftover chocolate can be stored at room temperature for another use.) Sprinkle with reserved cookie crumbs.
  3. Refrigerate until firm, about 1 hour. Store leftover truffles, covered, in refrigerator.

Cute Valentines Day Craft!


  • One piece of tissue paper 16" square or four 4" square pieces of tissue paper
  • Dum Dum lollipop
  • Floral tape

1) Cut out four flower shapes from tissue paper and stack them on top of each other.

2) Push the end of a lollipop stick through the center of the flower shapes going through all four layers of tissue. Slide the flowers all the way up the stick to the lollipop and adjust the flower petals so they look nice.

Learn to wrap floral tape around flower stems3) Using floral tape, wrap the tape around the underside of the flower where the tissue and lollipop come together. Wrap the tape 2 or 3 times around this spot then continue to wrap the tape down the length of the stick and back up again ending with an additional two wraps around where you started. When using floral tape, you need to stretch it slightly as you wrap for it to adhere properly. At this point, you will still be able to adjust the inner three layers of tissue but do not try to move the layer with the tape on it as it will rip the tissue.

Chocolate Cake With Raspberry Sauce

You will be surprised how easy it really is to make this yummy cake!


Cake
1 cup semisweet chocolate chips (6 oz)
1/2 cup butter or margarine
1/2 cup all-purpose flour
4 eggs, separated
1/2 cup sugar
Sauce
1 box (10 oz) frozen raspberries, thawed, drained and juice reserved
1/4 cup sugar
2 tablespoons cornstarch

Glaze
1/2 cup semisweet chocolate chips
2 tablespoons butter or margarine
2 tablespoons light corn syrup
  1. Heat oven to 325°F. Grease bottom and side of 8-inch springform pan or 9-inch round cake pan with shortening. In 2-quart heavy saucepan, melt 1 cup chocolate chips and 1/2 cup butter over medium heat, stirring occasionally. Cool 5 minutes. Stir in flour until smooth. Stir in egg yolks until well blended; set aside.
  2. In large bowl, beat egg whites with electric mixer on high speed until foamy. Beat in 1/2 cup sugar, 1 tablespoon at a time, until soft peaks form. Using rubber spatula, fold chocolate mixture into egg whites. Spread in pan.
  3. Bake springform pan 35 to 40 minutes, round cake pan 30 to 35 minutes, or until toothpick inserted in center comes out clean (top will appear dry and cracked). Cool 10 minutes. Run knife along side of cake to loosen; remove side of springform pan. Place cooling rack upside down over cake; turn rack and cake over. Remove bottom of springform pan or round cake pan. Cool completely, about 1 hour.
  4. Meanwhile, add enough water to reserved raspberry juice to measure 1 cup. In 1-quart saucepan, mix 1/4 cup sugar and the cornstarch. Stir in juice and thawed raspberries. Heat to boiling over medium heat. Boil and stir 1 minute. Place small strainer over small bowl. Pour mixture through strainer to remove seeds; discard seeds. set aside.
  5. Place cake on serving plate. In 1-quart saucepan, heat glaze ingredients over medium heat, stirring occasionally, until chips are melted. Spread over top of cake, allowing some to drizzle down side. Garnish with fresh raspberries.

Cheesy Stuffed Meatloaf

This is the best meatloaf I have ever made. My kids love it! Cheese seems to make anything better!


1/2 cup crushed saltines or bread crumbs if you don't have the saltines around
2 pounds ground meat (beef, sausage, turkey or a mix)
1 egg
2 teaspoons crushed garlic
1 small onion, chopped
salt and pepper to taste
1/4 cup ketchup
2 tablespoons Worcestershire sauce
cheese ( can kind, I use swiss cheese slices and some shredded colby & monterey jack)
some ketchup for the top


Preheat oven to 350°. Spray loaf pan with non stick cooking spray.

In a large bowl, mix together meats, bread crumbs, egg, garlic, onion, salt and pepper, Worcestershire sauce and ketchup. Don't over mix, just mix with your hands until everything is combined well. Split meat mixture in half. Place half in the pan. Layer with the cheese slices and the shredded cheese.Top with second half of the meat mixture, then go around the edges and make sure you seal the meatloaf to keep the cheese inside.Pour tomato sauce over the top and then bake for about 60 minutes or until meat is done.

I just realized that I never actually posted this recipe.......here it is


1 pound chuck or 1/2 pound chuck
1/2 pound ground turkey
1 tsp Italian seasoning
1 28 oz jar spaghetti sauce (your favorite)
1/3 cup water
8 lasagna noodles
1 4 1/2 oz can mushrooms
1 15 oz carton ricotta cheese (optional)
2 cups shredded mozzarella cheese
Brown meat and seasoning, drain.

Mix spaghetti sauce and water. Place 4 uncooked noodles in lightly greased crockpot.

Layer with beef mixture, sauce and mushrooms.

Spread evenly with ricotta cheese and sprinkle with 1 cup mozzarella.

Layer with remaining noodles, meat, sauce mixture, mushrooms and mozzarella cheese.

Cover, cook on high 1 hour.

Reduce heat and cook on low 5 hrs.

Susie's Valentines


I found a box of these marshmallow Doughnuts at Walmart, and thought they were super cute! I had to find a way to use them for Susie's Valentines, so this is what we came up with!

Peach Pie





This cold Texas weather made me crave hot peach pie.....here is a really easy recipe

# pastry for a double-crust 9-inch pie
# 5 cups fresh peaches, sliced or frozen thawed and drained
# 1 cup sugar
# 1/3-1/2 cup all-purpose flour
# 1/4-1/2 teaspoon cinnamon
# 2 tablespoons butter
# 2 tablespoons sugar


# 1 Preheat oven to 425 degrees F.
# 2 Stir together flour, 1 cup sugar, and cinnamon and set aside.
# 3 Wash, peel, and slice fresh peaches.
# 4 Mix together peaches with the combined dry ingredients.
# 5 Turn into pastry-lined pie pan and dot with butter.
# 6 Cover with top crust, cut slits in it, seal the edges.
# 7 Sprinkle top with 2 tablespoons of sugar.
# 8 Cover the edges with foil to prevent over browning; remove foil for the last 15 minutes of baking.
# 9 Bake 35 to 45 minutes or until crust is brown and juice begins to bubble through the slits in the crust.

Jaxson's Valentines






It is so hard to find cute stuff for boys, especially the older they get. Once I saw these suckers I knew I wanted to do something with them!He really loves Super Mario Bros so we downloaded the Mario Bros and pasted them on a document, then we used our circle cuts to cut them out and we glued them on the suckers. Jaxson and I had so much fun making them together.
