Oatmeal Cookies
These cookies are so good they probably won't even make it to your cookie jar!
2 cups all-purpose flour 1/2 teaspoon baking powder 1 teaspoon baking soda 1/2 teaspoon salt 1/2 cup butter 1/2 cup vegetable oil 1 cup packed brown sugar 1 cup white sugar 2 eggs 2 cups quick cooking oats 1 cup chocolate chips (this time I added heath chips, but you can add almost anything....Raisins, White Chocolate Chips, Walnuts.....etc)
Preheat the oven to 350 degrees. Stir together flour, baking powder, baking soda, and salt; set aside.
In a medium bowl, cream butter, oil, brown sugar, and white sugar until smooth. Beat in eggs one at a time. Gradually stir in the sifted ingredients until well blended. Mix in oats and chips. Drop from a teaspoon onto ungreased cookie sheets.
Bake for 10 to 12 minutes in preheated oven, or until edges are golden. Let set up on the cookie sheets for a few minutes before transferring to wire racks to cool completely.
